Chicken Adobo Recipe

Chicken Adobo is one of the famous main dishes in the Philippines. It is commonly serve during fiesta, birthdays, parties, or even common meals. This recognized Filipino food is the easiest that you can get if you want to eat a delicious yet cheap cuisine. 

According to history, the name “adobo” was from the Spanish. However, the cooking process is very native to the Philippines. During the late 16th and 17th century, the Spanish encountered an ethnic cooking method which involved stewing with vinegar (adobo), which is the Spanish word for seasoning or marinade. 

Cooking Chicken Adobo is not complicated and hard at all. You don’t need to be an expert to cook this. However, of course, you should have a little amount of money to buy all the ingredients, and follow the procedures below. Have fun and enjoy! 

Ingredients 

2 lbs chicken, cut into serving pieces 
4 tbsp soy sauce 
3 cloves garlic, crushed 
1/4 cup cooking oil 
1 to 2 cups water 
3 pcs dried bay leaves 
whole peppercorn 
2 tbsp vinegar 
1/2 tablespoon white sugar 
salt to taste 

Cooking Procedure 

  • Marinade the chicken for at least 3 hours by combining the soy sauce and garlic. 
  • Put cooking oil in a pan and apply heat. When the oil is hot, put-in the marinated chicken, and cook all the sides for 5 minutes. 
  • Pour the remaining marinade in the pan and add water. Bring to a boil.
  • Add the whole peppercorn and dried bay leaves. Cook for 30 minutes or wait until the chicken is tender. 
  • Add the vinegar and cook for 10 minutes. 
  • Add the sugar, and salt to taste. 
  • Stir and turn the heat off. 
  • Serve hot. Enjoy your chicken adobo!
